Happy Birthday Week to me!
Didn't we just have a holiday! Gee z! Cut me some slack!
Straight from 4th or July and HELLO! A birthday pops up!
I bought and Eliptical Machine. I have been riding it some trying to build up to a respectable amount of time.
It is a lot harder than I thought it would be.
 But I am lasting longer than when I first bought it a few weeks ago!

I guess I should start by saying I am sorry I haven't posted in a while.
I had been sick and then it just.. killed my motivation.
Sad to say but it's true. I have been drained!
I have got to  force myself to be focused once more!!!!!!!!!!!!!!!!!!!!!!
Life gets in the way A LOT!
Spouses too..Sometimes! LOL! Especially the ones that don't have to worry about their weight!
I have really and truly been really really--way off course!
But the good part is that I can pick up and start again.
Summer leaves me feeling hot tired and useless. Even with the fun outings and things we seem to be on the go go go.. Hey did I say GO! Which leaves no time for what I really should be doing as far as healthy low carb eating. It's so easy to grab a burger a BLT or sandwich of any kind in the Summer.
Oh and lets not forget the chips and cakes and pie....
I am sure most of you understand what I mean.
I hope you enjoy this post since it has been a long while since I last posted.

Whew! Easter is gone and so is all the temptations! 
Now lets get back to low carbing! I want to really concentrate and be good!
I need to lose about 20 more pounds! I would like to lose more but for now I just want to stick with that!
Since Jan 24th I have lost about 15lbs. Not quiet as much as I had hoped for. 
But the scale is not stuck any more and it is not going in the wrong directions!!!
Which makes me Happy!!!

I do have a little left over jet lag from the holiday is seems. I had way too many carbs!
It's funny how I can tell I am in carb overload now.
Typically I feel as though I am in a Carb Coma...
Know what I mean????

Here is something for those of you that are like me.. Allergic to eggs! :( Too bad I really love them.
It's just that my delicate system cant handle them at all hardly. I can bake with them but that's about it.

Hippity Hoppity It's Easter Bunny Time! 
Okay So have Easter as your cheat day if you must Indulge!
Just want to make sure everyone notices. When I do the weekly recipe post, there should  and will be links with the photos to take you the recipes.

Okay Guys I will just go ahead and get my chicken fix outta the way. You know I have to share a million chicken recipes... Easy Bake Honey Mustard Chicken Tenders:

Okay a couple weeks back I made skillet greens. This in turn put us on a turnip green kick.
We have had skillet greens a couple more times. They were indeed yummy. This is another post I saw
using turnip greens that looked really interesting and good.

Well how about a fried pickle for and Appetizer? You know you have to keep it light on the batter.  To keep it low carb use some almond flour instead of regular flour or just barely flour them.

     I am doing my best to keep up with new interesting recipe post for you. I hope that you are enjoying them. I hope that your low carb journey is going well. I started this journey back again in late January. It was around the 24th. That would be 01/24/14. Because at work I signed up for the Scale Back Alabama contest at work. I joined a team of 4 other ladies. The commitment requires each individual on the team to lose at least 10lbs. In the time frame of 1/24/14 to 4/10/14. Well to date I have lost 14lbs! Yep I will take it!

OKAY SO WE MIGHT AS WELL START WITH BREAKFAST!
Since my husband has been on a Pancake kick lately... I thought I would post this.. It's pancakes yest make with ground almonds instead of flour. I think you can get almond flour at Walmart if you dont want to grind them up yourself. But nothing taste better than some yummy pancakes you could make it thinner for crepe's for a dessert to I suppose. with some strawberries and cream cheese filling. Yummy! now I'm Hungry!

 I found this to be very interesting. I haven't tried it yet. I am going to try it though.
Especially since I cant have noodles while doing the low carb thing. Well I try to stay away from the pasta as much as I can. This seemed yummy and interesting and to be a great idea.
You buy this slaw and cook it for about 5 minutes or until tender and use it for your noodle replacement.

Veggie Pasta Alternative-Hungry Girl. Add 1/4 cup of water and cook til tender 5-8 minutes. Add tomato sauce and ground turkey. Delicious!

Don't forget another noodle/pasta replacement is spaghetti squash!
It is quiet yummy indeed!

Here's an idea for a sided dish that is not just the same old boring thing.
It looks so good.

BROCCOLI, HAM, AND MOZZARELLA BAKED WITH EGGS


Broccoli, Ham, and Mozzarella Baked with Eggs..4-6 cups very small broccoli flowerets, blanched about 2 minutes, then drained well. 1-2 cups diced ham (1/2 - 1 lb.) 1 cup low-fat grated Mozzarella 1/3 cup thinly sliced green onion (optional, but good) 8-10 eggs, well beaten.BAKE 375,35-45 MIN.

Here's another snack idea for you. This one might even work as an on the go type of a snack.

Who doesn't need to know that. I mean our poor liver and the things it has probably had to suffer threw over the years. You know all the junk we push threw our bodies everyday.
